Green Bean Chicken Casserole Packets
Inngredients:
4 (18 x 12-inch) sheets heavy duty aluminum foil
4 boneless, skinless chicken breast halves (1 - 1¼ lb.)
10¾ ounce can cream of mushroom soup, undiluted
½ teaspoon salt
¼ teaspoon pepper
Paprika
2 cups frozen cut green beans
1 1/3 pounds (4 medium) potatoes, cut into ½-inch cubes
2 tablespoons butter or margarine
Directions:
Set grill to medium-high or Preheat oven to 450º
Center one chicken breast half on each sheet of heavy duty aluminum foil.
Combine soup, salt and pepper.
Spoon soup mixture over chicken and sprinkle with paprika.
Top with vegetables; dot with margarine.
Bring up foil sides.
Double fold top and ends to seal packet, leaving room for heat circulation
inside.
Repeat to make four packets.
Grill for 22 to 24 minutes on a covered grill or Bake for 30 to 35 minutes on
a cookie sheet in oven.

Serves 1
Smush two canned biscuits together in a bowl. Mix in some brown
sugar and
cinnamon. Spray pie iron with butter flavored pam. Cook one minute
per side
over campfire.

Turtle Dinners
8 Servings
Slice up: 2 green peppers, 2 small onions, 3 tomatoes, 3 potatoes, 8
boneless chicken breasts,
16 slices of American cheese. You also need: 2 shredded carrots, 1
bottle ranch dressing,
1 can cream of mushroom soup, salt and pepper, garlic, alumimum
foil.
Each person makes up their own packet. Put your chicken breast and
vegetables in center of the foil.
Place 2 slices of cheese on the top. Choose a liquid: Ranch
dressing, cream of mushroom soup or water.
Seal up your packet and throw it into the hot coals of a campfire
for about 20 minutes. When your
potatoes are cooked it is done! Rip it open and eat it right out of
the foil.

Taco Burger and Potato Packets
1 lb. lean ground beef
1/2 cup Progresso Plain Bread Crumbs
2 Tbsp. Taco Seasoning Mix
1/4 cup milk
3 cups frozen southern-style hash-brown potatoes
1 (10-1/2 oz.) can condensed fiesta nacho cheese soup
Heat grill. In medium bowl, combine ground beef, bread crumbs, taco seasoning mix and milk; mix well. Shape mixture into four 4-inch patties. In medium bowl, combine frozen potatoes and soup; blend well.
Cut four 18x12 inch pieces of heavy-duty foil. Place 1 patty on each; top with 1/4 of potato mixture. Wrap each packet securely using double-gold seals, allowing room for heat expansion.
When ready to grill, place packets, seam side up, on gas grill over medium heat, on charcoal grill 4 to 6 inches from medium coals, or on campfire grill over medium heat. Cook 30 to 40 minutes or until burgers are no longer pink in center, rearranging packets several times during cooking.
To judge the temperature of a fire, cautiously hold you hand, palm side down, over the fire at cooking height. Now, count the number of seconds you can hold that position and you will have an indicator of how hot the fire temperature is:
5 seconds = low
4 seconds = medium
3 seconds = medium-high
2 seconds = high

Grilled Sausage with Potatoes and Green Beans
3/4 pound fresh green beans, trimmed and halved
1/2 pound red potatoes, quartered
1 large onion, sliced
1 pound smoked sausage, cut into 1 inch pieces
1 teaspoon salt
1 teaspoon ground black pepper
1 teaspoon vegetable oil
1 teaspoon butter
1/3 cup water
Preheat an outdoor grill for high heat.
On a large sheet of foil, place the
green beans, red potatoes, onion, and
sausage.
Season with salt and pepper, sprinkle
with oil, and top with butter.
Tightly seal foil around the ingredients,
leaving only a small opening.
Pour water into the opening, and seal.
Place foil packet on the prepared grill.
Cook 20 to 30 minutes, turning once, until
sausage is browned and vegetables are tender.

Campfire Baked Apples Stuffed with Raisins
Yield: 4 servings
4 green Granny Smith apples
1/2 cup sultanas (not golden raisins)
1/3 cup sugar
1 tsp ground cinnamon
Remove the cores of apples such that the apples are intact with a tube like hole right through the centre. Keep the skins of the apples.
Mix the sugar, raisins & cinnamon together. Stuff this raisin mixture into the cored apples in the tube-like hole. Compact well and wrap each whole apple in aluminum foil paper.
Throw INTO embers at campfire, wait 8-10 minutes, remove foil and serve.

Easy chicken foil packets
Ingredients:
4 boneless skinless chicken breasts or turkey breast meat
1 can cream of chicken or cream of mushroom soup
1 package of Stovetop dressing mix
1/3rd cup milk
sprinkle of Spanish paprika
salt and pepper to taste
4 - 8 slices of swiss cheese
You can substitute blue or *real* cheddar if desired)
I've tried "American" and it doesn't work well.
Directions:
Place one chicken breast on each piece of foil. Sprinkle with paprika, salt,
and pepper. Top it with one slice of swiss cheese. I usually use two slices
of swiss cheese on each. <g>
Combine the cream of chicken soup and the milk. Spoon approx. 1/4 of the
mixture
on top of the chicken, and then top with 1/4th of the dressing.
Fold across the middle and both ends to make foil packets. Cook at 350 for
40-50
minutes in the oven, or indirect heat on your grill. You can also cook this
on your
campfire. The time will vary on your campfire.

BARBECUED GARLIC
8 Heads Garlic
4 TBS Butter
Sprigs of Fresh Rosemary and/or fresh Oregano
Place whole heads of garlic, prepared
as for Roasted Garlic, on a sheet of
heavy-duty foil.
Top with butter (4 TBS per 8 Heads) and
a few sprigs of fresh rosemary or oregano.
If fresh herbs are unavailable, substitute
dried (2 tsp of dried herbs for 8 heads of
garlic).
Fold the foil over the garlic and seal the
package well.
Cook over hot coals for about 45 minutes,
turning the package occasionally with tongs.

1 large sweet onion, sliced
1 each large green, sweet red
and yellow peppers, sliced.
4 medium potatoes, sliced 1/2 in. thick
6 medium carrots, sliced 1/4 in. thick
1 small cabbage, sliced
2 medium tomatoes, chopped
1 to 1-1/2 pounds fully cooked Polish
sausage, cut into 1/2 in. pieces
1/2 c. butter
1 tsp. salt
1/2 tsp. pepper
Place vegetables in order listed on three
pieces of double-layered heavy-duty foil
(about 18 in. by 18 in.). Add sausage;
dot with butter. Sprinkle with salt and
pepper. Fold foil around the mixture and
seal tightly. Grill, covered, over medium
heat for 30 minutes. Turn and grill 30
minutes longer or until vegetables are
tender. Yield: 6 servings.
Hamburger patties or chicken breasts may
be substituted for the sausage.

one 15 oz Can spicy chili beans, undrained
one med Onion, sliced, separated into rings

Buffet-style, add the ingredients of your
choice, and then crack open over the bag
1, 2, 3 eggs into the bag, however many
the diner wishes.
Seal the bag, making sure most of the air
is removed.
Sqush the contents to mix up the ingredients
and break the yolks if you desire.
One person supervises the pot, and times the
bags (I dont remember how many minutes it takes
once the water returns to a boil) and the supervisor
removes the bags with a slotted spoon or tongs and
calls out the name on the bag.
Serve with flour tortillas, toast, coffee, juice
or what ever everyone wants.

BBQ CABBAGE
1 head cabbage (any size)
2 tablespoons butter or margarine
salt & pepper
any color bell pepper (optional)
mushroom (optional)
baby carrot (optional)
grape tomatoes (they will burst when cooking) (optional)
bacon (already cooked, or anything else you can think of! I usually use cabbage and one other ingredient at) (optional)
1. Cut cabbage into wedges and separate wedges.
2. If you are using other ingredients, slice those up as well.
3. Prepare foil by spraying with Pam or something else that will prevent sticking Place cabbage and other ingredients in center of foil.
4. Sprikle with salt and pepper to taste.
5. Drop butter or margerine on top of cabbage.
6. Fold foil into"packet" by folding sides in first, then rolling ends (be sure there is no way the butter can drip out) Cook on grill (charcoal or gas, but charcoal tastes best) on medium heat for about 30 minutes The mixture is done when cabbage& other ingredients are tender!

Spray both sides of a mountain pie iron. Butter one side of the rye bread. Put the buttered side of the bread against the pie iron. Layer corned beef, sauerkraut, salad dressing and cheese. Butter one side of another slice or rye bread and put the buttered side against the pie iron. Close the pie iron and toast on both sides until golden.
Pizza Mountain Pies
Sliced white bread
canned pizza sauce or spaghetti sauce
Your favorite pizza fillings like mushrooms, pepperoni, green pepper, onion, etc.
Sliced or grated mozzarella cheese
Butter
Pam cooking spray
Spray both sides of pie iron. Butter one slice of bread. Put butter side down on pie iron and layer sauce, pizza fillings and cheese. Butter another slice of bread and put it butter side down on the other half of pie iron. Put the pie iron together and toast on each side until golden.
From Lynn....You can use these basic instructions to make just about any kind of mountain pie. We also do apple ones with canned apple pie filling and a little cinnamon, sugar and a dab of butter. We have also used cherry, blueberry and peach pie filling. One of my favorite pies is ham and swiss cheese. Yummy!

Ingredients:
15-20 chicken wings
Mrs. Dash Butter and Herb Seasoning
Heavy Duty Aluminum Foil
Instructions:
Fold aluminum foil to make a large pocket for the grill. Place chicken wings on foil and sprinkle Mrs. Dash on chicken. Cover with foil and cook at least one hour, or until chicken is lightly crispy. When done, unfold aluminum foil and enjoy the chicken at the campfire.

Polish Sausage and Vegetables~Camping Out/Meals
You will need:Reynolds Wrap bag/foil
Ingredients:
1 tsp. garlic salt or Cajun seasoning
1 tsp. oil
4 Tbsp. soft margarine
1 pkg. Polish sausage, sliced into 6 to 8 pieces
2 baking potatoes, cut into quarters
1 green pepper, sliced
1 container fresh mushrooms, sliced
1 squash, sliced
1 large onion, sliced
Spread oil, margarine and seasonings in bag. Add remaining ingredients. Light fire and place on coals after heated. Using a fork, make 6 vent holes in bag. Cook for 30 to 60 minutes, depending on how hot the coals are. Makes 4 to 6 servings.

Less time is needed for canned veggies. Turn packages 2 or 3 times during cooking. May be done on charcoal or gas grill. Serves 4.

Directions:
At home prepare taco meat;
put in zip-lock bags and
place in camping cooler.
You can also saute some onions
and bell peppers and put in
zip-lock bags too.
At camp:
Place a large tortilla on
the pie iron.
The tortilla will cover both
sides of the open pie iron.
You will place your ingredients
on one side only! Fill with 2 tbs.
of taco meat, a spoon of salsa,
cheddar cheese and a few onions
and peppers.
Don't fill too full!
Fold the burrito in half and fold
in the edges to make a square packet.
Close the pie iron and cook for about
3 minutes on each side.
Check to make sure you don't burn it!
When the tortilla is golden brown it's done!
Enjoy!
You can spice it up with hot salsa if you like!

I love blooming onions and played around with cooking these. I usually serve with a dip.
Ingredients:
4 large Vidalia onions
1/4 cup butter
4 cloves of garlic
salt and pepper, to taste
Instructions:
Peel onions and cut each one into quarters, keeping onions together. Place 1 tablespoon of butter and 1 clove of garlic in the middle of each onion. Double wrap each onion in foil and place on hot coals. Cook for 30 to 40 minutes. Carefully remove from coals and unwrap. Season with salt and pepper, then eat. You can also serve with a Ranch dip or hot sauce.

Wrap foil loosely around potatoes, making sure ends are well sealed. Cook about 4 inches from hot coals on grill for about 1 hour or until tender. Turn package often to keep from burning.

10 American cheese-sliced into hot dog-length -fingers
10 slices Bacon
Distance: 40 miles
At home or on the road, cut a deep slit in each wiener, and stuff with fingers of cheese. Then wrap on the diagonal, like an old bias-ply tire, with the bacon. Seal individually in foil. These are great for stuffing into those odd places on the engine where you can't fit a turkey or a suckling pig. Cook about 45 minutes, or until cheese is melted and bacon is somewhat crisp.

Premium Packet Potatoes
A family pleasing side-dish is all wrapped up in one foil packet.
1 small onion; thinly sliced
4 medium red potatoes; cut into bite-size pieces
1 medium bell pepper; diced
1/2 cup Italian or Ranch salad dressing
Spray an 18x24" sheet of heavy duty aluminum foil with non-stick cooking spray. Sprinkle onion slices down the centre of the sprayed side of foil. Combine remaining ingredients , except dressing, in a small bowl; salt and pepper to taste. Toss with dressing to coat. Layer mixture evenly over onion slices. *Wrap foil into a packet. Bake at 450F for 30-35 minutes or grill, covered, over medium/high heat.
Note: *How Fold Foil Packets
For each foil packet, bring up the two sides of the foil and double fold with about 1" wide folds. Leave room for heat circulation inside the packet as the food cooks. Double fold each end form the foil packet.

Campfire Breakfast Sandwiches
* Non-stick spray
* 1 English Muffin
* 2 Slices Canadian Bacon / Soy alternative
* 2 Slices Cheese
* 2 Eggs
* Butter
* Salt and Pepper
Directions:
Spray non-stick spray on the foil. Make a basket which does not
leak with the foil. Lay the muffin in the foil open face. Butter the
muffin. Put the canadian bacon and cheese on each side of the
muffin. Put the canadian bacon and cheese on each side of the
muffin. Crack the eggs over the muffins. Salt and pepper to taste.
Close up and cook until finished. The recipe should be repeated
for each person.

SUBMARINES IN FOIL
Scoop out a bowl in the center of a hard roll. Mix together canned
luncheon meat, corned beef, or minced ham with pickle relish, diced
egg, and grated cheddar cheese. Moisten with salad dressing or
undiluted cram of chicken soup. Fill rolls with the mixture and wrap
each individually in double-thickness foil. Cook 20-25 minutes over
hot coals.

Box of biscuit mix

Jam, jelly, and cheese
clean pronged stick
Open a biscuit box and make a depression in the contents so you can pour a little water into the hole. Stir it gently with a clean pronged stick until it forms an egg-sized ball. Remove the ball from the stick and flatten it, and then wrap it around another clean, preheated stick to bake as you twist it over the coals. Or, form itinto a biscuit shape and bake it in aluminum foil. For extra flavor, serve with jam, jelly, or cheese. For pizza, flatten the dough, spread on pizza sauce and toppings, wrap in foil and bake on coals.

HOBO POPCORN
In the center of a 6" square of aluminum foil, place 1 teaspoon of
cooking oil and 1 tablespoon of popcorn. Bring foil corners together
to make a pouch. Seal edges by folding, but leave room for corn to
pop. Tie each pouch to a long stick with a string and hold the pouch
over hot coals. Shake constantly until the corn has popped. Season
with butter and salt. Makes one for each person.

HOBO STEWS;
Variation 1 Stew in foil – Use heavy-duty aluminum foil. Take
18" by 18" piece and fold in half. Put small amount of oleo or oil on
bottom and place hamburger patty in place. Add sliced potatoes,
carrots, onions, celery, etc. to top. Seal in a drug store wrap
fashion (see current edition of the Boy Scout Handbook for
directions). Place on coals – no flame – and cook 20 to 25 minutes
after the top gets too hot to touch. It is very important that there
be no leaks. If you have folded it right, you have a miniature
pressure cooker and will cook with steam from the water in the
hamburger and will not burn your meal. You may flavor it with spices
or I like to add a little instant onion soup mix.
Variation 2 Use a 2 ½ ((29 ounce) can. Put in a slice of onion,
hamburger patty, small diced potatoes, and any desired vegetables,
and cover with a large roll made from Bisquick or two store bought
rolls put together. You can add any liquid or flavorings that you
would like at this time. Cover with aluminum foil and place in hot
coals. It will cook in about 25 to 30 minutes.
Variations- You can substitute chicken, ham, sausage, hot dogs, or
even tuna fish in these recipes to make them more fun. Remember,
these foods will take different cooking times so be sure to
experiment with them.

Fold aluminum foil in half. Lay hamburger on foil, top with sliced
potato and veggies as desired. Fold foil up to touch food and place on grill or coals. Cook 20 minutes after top is hot and swelling.
